Fire Roasted Heirloom Tomato Soup
Rate this recipeSmoky, savory tomato soup with a southwestern flair.
I’ve been working on this recipe since my stint in Denver, where I was inspired to put a southwestern bend on this classic. It’s my favorite thing to make when heirloom tomatoes are fresh in season during the last glimpses of summer. I always have mine with grilled cheese.
Fire Roasted Heirloom Tomato Soup
Ingredients
Soup
- 2 lb fresh tomatoes (mix of cherry and heirloom)
- 1 red bell pepper, cut into large chunks
- Olive oil
- ½ onion, diced
- 16 oz chicken broth
- 2 tbsp soy sauce
- 2 tbsp honey
- Salt and black pepper
- Fresh cilantro, chopped
Crema
- ⅓ cup non-fat Greek yogurt
- 2 tbsp milk
- Juice of ½ lime
- 2 tsp honey
- Pinch of salt
For Serving
- Grilled cheese
Steps
- Preheat the broiler to High (450–500°F) with the rack 4–6 inches below. Cut the heirloom tomatoes into chunks and arrange them with the bell pepper on a baking sheet. Drizzle with olive oil, season with salt and pepper, and broil for 15–20 minutes until blistered and charred.
- Dice the onion, chop the cilantro, and whisk together the crema ingredients. Refrigerate until ready to serve.
- Caramelize the onion in a large pot over medium heat with olive oil.
- Transfer the bell pepper to a covered bowl to steam. Add the roasted tomatoes and all of their juices to the pot with the chicken broth. Crush the tomatoes and simmer until reduced by about one-third.
- Peel the bell pepper, blend it into the soup until smooth, then stir in the soy sauce and honey. Season with salt and pepper to taste.
- Strain through a fine-mesh sieve, return to the pot, and reheat.
- Make a grilled cheese while the soup heats.
- Serve topped with the crema and cilantro alongside the grilled cheese. Enjoy!
